2015 Bromley Shiraz
Tasting Notes
Deep, vivid and lively to the eye
Lifted, fragrant and immediately intoxicating from the glass
Black cherry, ripe stonefruit, intense red berries with a hint of pepper.
Medium bodied in structure it is rich, bold, and vibrant in the mouth delivering a juicy, moreish impression that lingers thanks to the subtle tannins, bold fruit and balanced acidity.
Winemaking
The fruit for this wine was sourced from the Camelback Vineyard in Heathcote. Harvest of the fruit occurred early in March. It was refrigerated overnight then delivered to the winery the following morning
The fruit was destemmed to a combination of open fermenters and was allowed to warm up and ferment utilising a combination of ambient yeasts and known yeasts. Once a 50% drop in fermentable sugar had occurred the cap was plunged once a day until the alcoholic fermetation was complete. The wine remained on skins for a further 5 days and then was pressed to tank for settling and then cleanly racked to used
French Oak for maturation where natural malolactic fermentation occurred. Following 10 months in oak the barrels were racked, blended and assembled for bottling with no fining.
