Wow, what a colour – vibrant luminous salmon
Violets, cherries, spice and anise charge forward announcing a wine of lifted perfume.
Absolutely bone dry the wine provides a fresh, lively, textural and creamy experience with soft acidity and delicate fine tannins the mouthwatering highlight.
Winemaking
The Nebbiolo fruit for this wine was sourced from the Camelback Vineyard in Heathcote.
Hand harvest of the fruit occurred in late March. It was refrigerated overnight in Heathcote then delivered to the Geelong winery the following morning
The fruit was destemmed and allowed to dwell on skins for 4 hours for tannin and colour impact. Gentle pressing followed with all juice collected. 24 hours later the cloudy juice was racked off the heavy lees for fermentation. A combination of natural yeast and known yeasts were utilsed for fermentation. Half way through ferment a portion of the juice was run off to 2 x old 300 litre French Hogsheads to finish, the balance was kept cool for longer aromatic fermentation.
Elevage of 3 months during which the oaked component went through natural malolactic fermentation.
The wine was racked, blended, stabilsed and filtered prior to bottling
