2021 Cabernet Sauvignon
Tasting Notes
Bright, deep ruby red
Wow, what a delight to the senses! Bursting from the glass – sage, cassis, black cherry, fresh earth and pepper. Compelling and complex, beguiling as nuance is unveiled. One minute herbacious, next minute fennel and currant, then moving on to iodine and graphite with hints of pencil lead.
Luxurious in the mouth, silky, soft and full with balanced acidty all adding up to a wine to be enjoyed now and into the next decade.
Winemaking
The fruit for this wine is sourced from a secret, mature vineyard in the Moorabool Valley of the Geelong region.
Harvest occurred during March and the fruit was delivered to the winery in the late afternoon.
90% of the fruit was destemmed allowing a small component of whole bunch fruit to be placed in each fermenter. Two fermenters were untilsed, one being a stainless steel vessel and the other a Spanish terracotta amphora. Once the cap rises the skins were submerged gently once or twice a day until the alcoholic fermetation was complete. Following alcoholic fermentation the stainless steel component remained on skins for 30 days in total then was preseed out, settled and racked to old French oak hogsheads for malolactic fermentation. The amphora component was left on skins for 180 days, pressed by hand, then settled.
Following 10 months all components were racked, blended and assembled for bottling. The wine was filtered but is unfined.
