Made in a combination of vessels to bring richness, power, texture and tension.
Think just ripe stone fruit, white flowers, citrus elements and spicy oak.
Immense pleasure for the drinker now, but will evolve gracefully into the next decade.
Winemaking
The fruit for this wine was sourced from the White vineyard on the Bellarine Peninsula.
Harvest occurred mid March and the fruit was delivered to the winery in the late afternoon where it was immediately refrigerated overnight.
The following morning the fruit was whole bunch pressed and the juice settled ambiently for 24 hours. The cloudy juice was then racked to oak, amphora and stainless steel where a combination of natural and controlled ferments took place.
Ferment duration was around 10 days for each component. At this stage the oak and amphora vessels were topped from the stainless steel vessel and allowed to evolve.
Following 9 months maturation all components where racked and assembled for bottling. The wine was unfined, but filtered.
